  1. Mix the marinade ingredients together.
  2. Put the chicken in an ovenproof tray and coat in the marinade. Cover and refrigerate for 4 hours.
  3. Meanwhile put all the sauce ingredients into a small pan apart from the cornflour / water mixture.
  4. Bring to the boil then stir in the cornflour / water mix and let thicken, still stirring.
  5. Taste and see if it needs more chilli. You should taste the sweetness first then get the hot kick after.
