- You need of skinless, boneless chicken breasts.
- You need of nests of rice (or egg) noodles.
- You need of Marinade.
- Prepare of oil.
- Prepare of finely chopped garlic.
- You need of granulated sugar.
- Prepare of black pepper.
- Prepare of dried basil.
- You need of smoked paprika.
- Prepare of ground cumin.
- It's of dried thyme.
- It's of ground coriander.

- Prepare of rice vinegar.

- Prepare of finely chopped garlic.
- Prepare of red chilli, finely chopped or to taste.
- It's of cornflour / starch mixed with 6 tbsp water.

- Mix the marinade ingredients together.
- Put the chicken in an ovenproof tray and coat in the marinade. Cover and refrigerate for 4 hours.
- Meanwhile put all the sauce ingredients into a small pan apart from the cornflour / water mixture.
- Bring to the boil then stir in the cornflour / water mix and let thicken, still stirring.
- Taste and see if it needs more chilli. You should taste the sweetness first then get the hot kick after.
- Let cool and refrigerate until needed.
- Preheat the oven to gas 5 / 190C / 275°F.
- Bake the marinated chicken for 20 minutes.
- Now pour the chilli sauce over the chicken and bake a further 10 minutes.
- Meanwhile cook the noodles to the packet instructions, usually you just boil them for a few minutes.
- You could cook some mange tout and baby corn to add for colour or instead of noodles serve with stir-fried veg.
